Azores Food Lab returns to Ponta Delgada from 26 October

Ponta Delgada will host Azores Food Lab from 26 to 31 October, with training, a gastronomy conference and visiting chefs.

The third Azores Food Lab will take place at Pavilhão do Mar in Ponta Delgada from 26 to 31 October. Previously called Week Food Lab, the event aims to qualify and promote Azorean gastronomy through training that links traditional knowledge with contemporary techniques.

The conference "Gastronomia Atlântica, Identidade, Tradição e Turismo" is scheduled for 27 October. It will consider the importance of training and its potential to create added-value opportunities for local restaurants.

The programme includes basic-level training for cooks and other members of the public who want to improve their culinary skills. Organisers will hold themed dinners prepared by invited chefs on 29, 30 and 31 October.

National participants include Angélica Salvador of In Diferente in Porto, Tiago Bonito of Éon in Porto, and Diogo Formiga of Encanto in Lisbon. International participants include Sam Lawrence of Bridges in New York, United States, and Norman St-Pierre of Narval in Quebec, Canada.

The chefs will visit producers as part of a local immersion programme focused on regional products. Training in dining room service, bar and wines will include Augusto Brumatti of Vila Vita Parc Resort in the Algarve, Pedro Marques of Gastronómico at The Yeatman, and Sara Marques of Le Monument in Porto.
